以前農業社會 在來米是當時普遍的米種,在加上物資缺乏的情況,
因此農家巧婦們都會利用在來米組織鬆散黏性小的特性,經過研磨讓米粒的分子細小變成米漿、
再倒到竹籠用大灶蒸炊,做成老一輩稱為「水粄仔」的食物,
讓家人出遠門或下田時放在身邊當點心,演變到後來人們將多餘的食物跟米漿倒進碗裡蒸煮,
因此也被人稱作『碗粿』。麻豆助碗粿的口感取決於單一米種,嚴選臺灣在萊老米(也是臺灣的在地老米種)不加任何增加Q度之添加物.以祖傳特製的紅蔥香菇肉燥、上選後腿肉、鹹蛋黃、、蝦米、為餡料,秉持遵循古法繁瑣的製作保持碗粿的傳統美味。
In the old agricultural society, rice was a common species at that time, and in view of the lack of supplies, farmers would make use of the loosely-knitted rice to turn the small molecules into rice pulp, which was then poured into bamboo cages and steamed on a large stove. The rice syrup was then poured into a bowl and steamed, hence the name ‘Savory rice pudding’. The texture of the maldou-assisted bowl kuey teow is based on a single rice variety, which is also the local rice variety in Taiwan, and no additives are added to increase its Q. The fillings are made with our ancestral special red onion and mushroom dried meat, selected hind leg meat, salted egg yolk, shrimp and rice.
