酸菜腸中腸是本餐廳的手工招牌菜,這道料理處理工序上相當繁雜,將腸子層層套疊後,再以主廚特製的滷汁滷過,滷汁層層鎖住在腸子中,再搭配自製的酸高麗菜,酸高麗菜的酸鮮味滾煮入味到香滷軟嫩的腸子中,兩者不同香氣的融合、香氣飽滿。層層堆疊的腸子一口咬下,嚼勁的口感還吸附飽滿的滷汁,滷汁裡有多種層次風味,有著帶著酸高麗菜的清香,以及辛香甘甜的滷汁,真的會讓人驚艷。

This is a signature dish of the restaurant, and the process is quite complicated, as the sausages are stacked in layers and then marinated in the chef’s special marinade, which locks in the layers of sausages, and then paired with homemade pickled cabbage. The chewy texture of the piled-up sausage is complemented by the full-bodied marinade, which has multiple layers of flavour, with the freshness of the pickled cabbage and the pungent sweetness of the marinade, making it truly stunning.
