This dish is the result of the chef’s deepest memories of his mentor, whose teachings were always vivid in his mind from the time he was an apprentice. The dish is made from specially selected parts of Taiwanese pork, with more than 10 kinds of herbs and chillies, which gives it an extra layer of spicy flavour unlike traditional braised pork knuckle.
